Description from owner

Description

In the heart of the tuscan countryside, through oaks and wild myrtles, Villa Fonteintanata lies harmoniously in the middle of uncontaminated nature, allowing its inhabitants and guests to experience a unique feeling of magic

and peace. Villa Fonteintanata is the ideal place not only to appreciate the

incredible beauty of the historical-artistic and natural heritage of the tuscan hinterland but also a corner where to set aside problems and stress, allowing you to dedicate some time to yourself.

BEFORE

Fonteintanata was born in the early 17th century as a farm.

Since the end of the 1900 the estate land was used for agricultural activities - mainly grain growth - devoting its services to the family of the Marquis of Casaglia. A typical tuscan stone farmhouse divided on two floors:

the ground floor historically used as stables, cellar and grain storage,

whilst the first floor was inhabited by the farmers that worked the fields and tended the cattle.

A magical place, where the dedication, love and passion for this land are secular prerogatives that are still firmly rooted in our souls and lifestyles.

YESTERDAY

Leandro Magnaghi, renowned entrepreneur and a man who travelled the world, decided to purchase the property in 1981 when Fonteintanata was a little more than a ruin. Years and years of building and land renovation have made the estate what it is today. The efforts and dedication of Leandro have been passed on to its son Nicola, that took over after him. Nicola Magnaghi, milanese by birth and tuscan by adoption, graduates in Veterinary Medicine at the age of 27 at the Università degli Study of Milan. After a few years of professional practice around Italy, Nicola transforms the property

in its own working space. Within a short period of time the wastelands of Villa Fonteintanata are found accommodating more than 50 trotters;

an ideal place where mares and retired horses can rest and live peacefully.

After various professional achievements, such as obtaining the position of veterinarian of the commission of the famous Palio di Siena -position held for 10 years running - and the expansion of a range of already very wide services,

Nicola decides to pass on the company to his sons and to seek new opportunities abroad.

TODAY & TOMORROW

Today, Nicola’s son Nicolò, born and raised within these walls, runs the family business. A young, dynamic and ambitious new entrepreneur - in his eyes shines a strong desire to reinvent this corner of paradise. Through a combination of traditional agriculture to the principles of environmental sustainability, a 0km process production and total respect for biodiversity, Nicolò aims to give a new light to the company. His objective is to be able to grow products of very high quality, maintaining the values and authenticity of the italian culinary traditions, whilst always paying great respect to nature.

Thanks to the incredible amount of possibilities that this business offers us we hope in the future to be able to satisfy the majority of our food needs,

and to share this context with people that nourish like we do the will to pursue a lifestyle that respects nature and its biological rhythms.

Location description from owner

The Tuscany region

The farm covers an area of about 83 hectares in between Maremma and Chianti and boasts of its excellent organic extra virgin olive oil, a great production of truffles, a vegetable garden, a new orchard and a chicken flock.

The company has been certified organic for crops in 2016 despite having always used this method of conduction.

Our commitment has been constant, always.

Our oil is an extra virgin olive oil, certified as organic. Our olives, 100% from tuscan cultivars, grow without the use of any fertilizer of chemical origin. Specific microorganisms, as believed in the biodynamic philosophy,

are used only if necessary for the prevention of diseases.

Harvesting is done by hand, then pressed, through a process of cold-extraction that occurs at a temperature of 26°C at the olive mill by a rolling basis. The oils are filtered and conservation takes place in stainless steel containers to maintaining the organoleptic qualities over time.

The olive grove of Fonteintanata is home to the historical varieties of our territory. The plants cover an area of 2 hectares, with a distance between the olive trees of about 10-12 meters, thus favoring exposure to the sun and therefore photosynthesis, denoting a production based on quality rather than quantity. The constant presence of light winds and sea breezes make the position of the olive groves very privileged, thus making our oil a unique and valuable product.

Fonteintanata is also surprisingly rich of another valuable resource loved by

many connoisseurs: the truffle.

The Black Truffle (Tuber aestivum) is collected with the help of a scent dog, from early June to late September. The diamond of the forest with its refined and unique taste is mainly used in the making of delicious homemade pasta dishes or grated on meat. The passion nourished for this wonderful ingredients, makes it so that our company also manufactures products with the use of fresh truffle, such as butter and honey, that favor the preservation and enhance its aromatic note.
