Cornwall has a wonderful climate but it can be wet at times! It offers seasonal differences and wonderful walking opportunities on the coastal path and inland footpaths, cycling both on road bikes and mountain bikes, beaches for all types of activity, gardens including the Lost Gardens of Heligan and the now famous Eden Project are "must sees" and flourishing gastropubs, as well as Jamie Oliver's 15 in Watergate Bay and Rick Stein's various alternatives in Padstow are all worth a visit. The newish Maritime museum in Falmouth is useful for a wet day!
Truro is a city with a beautiful cathedral (which has just been cleaned on the exterior so is even more beautiful) and an array of very good shops which are of interest to all age groups. It has a very good popular farmers market with excellent local produce.
The Hall for Cornwall is centrally located and is where a lot of musical/theatrical productions/concerts are performed throughout the year. The annual Oyster festival in Falmouth is a fascinating experience as is watching the Tall ships enter Falmouth harbour.
