The Occitanie region

Languedoc Roussillon is a remarkable region. With the Mediterranean sea on one side and the Pyrenees to the south, it boasts contrasting culture and history. Intriguing history, that has survived the ages in tradition. The regions castles, fortresses or stunning abbeys, will take you back in time.

The weather in Languedoc has a Mediterranean climate, with hot dry summers and over 300 days of sunshine a year. Temperatures are frequently in the eighties (30c) plus. With an outstandingly diverse coastline, sheltered by mountains. A stunning coastal region offering beautiful beaches and watersports for everyone.
A region bordering Spain, it also benefits from some of the best winter sports in the Pyrennes.

For those wanting a less energetic holiday, there are many other pastimes to enjoy. Cycle along the Canal du Midi or take a walk along one of the many marked trails, ranging from hourly rambles to treks lasting days or weeks. There is horse-riding for all levels and canoeing too.

Food in Languedoc Roussillon is particularly enviable, due to its central location around the basin of the Mediterranean. Gastronomically rich, owing to the generosity of the sun, land and sea.
The Languedoc plain is home to some of Frances greatest fruit and veg growing, with Mediterranean favourites, such as, sun-ripened apricots, plump tomatoes, artichokes, zingy lemons and much more. Natural coastal ' etangs ' provide homes, for flamingoes and marine life. The water rich areas provide the perfect habitat for oysters and mussels. Sete is the biggest fishing port, where you will find the most amazing varieties of fresh fish; baby squid, octopus, red mullet, sea bream and tuna etc. A real seafood lovers dream!

Olive groves provide treasured oils that rarely leave the area due to their high demand. Enjoy a Lucque olive, with a glass of Muscat, as an aperitif. Woodlands, scented with rosemary, tyme and mint, provide a natural habitat for wild boar, which helps provide the Languedoc with its winter diet. A rich dark stew with a glass of scented Corbieres, what could be better?

For cheese lovers, you will not be disappointed. Goat's and sheep's cheese, infused with wild mountain herbs. Roquefort, world famous blue cheese, still made and matured in caves of the Larzac Plateau.
Languedoc, is the word largest wine region and also the most exciting. It consists of a multitude of appellations, including, Corbieres, Fitou, St. Chinian, Muscats du Languedoc, Limoux and Cotes du Roussillon, the list continues and though yields have been significantly reduced, quality is now the name of the game. Established vines of the indigenous grape varieties, such as, Grenache and Cinsault, are grown alongside less traditional Syrah, Merlot and Chardonnay. Whether it be, a chilled glass of Chardonnay, with a brimming bowl of Moules mariniere, or a hearty rustic cassoulet, with a deep red Faugeres, you will find that the Languedoc Roussillon offers you the perfect accompaniement, to whatever the mood, occasion or setting.

“Fabulous apartment”

Reviewed 17 Nov 2015

What a great apartment, clean, lovely furnished, and really spacious. It had everything you needed for a comfortable stay. The location of the apartment is good, right in the heart of town, everything is on your doorstep, butcher, baker, supermarket, restaurants, its about a half an hour walk to the walled cite, but not a difficult one.Sharon and Steve are great hosts,it was great to be picked up from the airport , no worrying about finding the apartment yourself, and then taken back at the end of your stay, they had even checked the flight was running on time for us.We had a lovely holiday, and would love to stay here again.

So pleased that you had everything you needed for a comfortable stay and had a lovely time. Thank you for your visit.

““Fantastic accommodation - lovely City - sad to leave””

Reviewed 1 Nov 2015

If you’re reading this, and looking for a fabulous apartment in Carcassonne….. You’ve found it. Ideally situated in the Place Carnod surrounded by some lovely cafes, bars and restaurants. The apartment’s interior is just fabulous, spotlessly clean and fully equipped. It also boasts a roof top terrace with terrific panoramic views. The owners are incredibly attentive and the communication throughout was spot on. Can’t fault it, would love to return at some point.

Wow- thank you for your amazing review. We were delighted to read it and it would be our pleasure to see you both again :)

“First class accommodation in a prefect location”

Reviewed 3 Oct 2015

Spent a wonderful week in September in this beautiful apartment which is fully equipped with everything you could possibly need. Location is perfect, within easy walking distance of La Cite, Canal du Midi, railway station, cafe's, shops & restaurants. Thanks to Steve & Sharon for the advice to take the train to Limoux for just 2 euros, well worth the trip, & for arranging a weekly ticket for parking which we would never have managed on our own. Would have no hesitation in recommending this apartment. We certainly hope to return in the near future.

Thank you for taking the time to review our apartment. It makes us very happy to know that you enjoyed your holiday, and that we will see you again in the future.

“Fantastic Apartment”

Reviewed 30 Sep 2015

Carcassonne had been recommended to us recently and it did not disappoint. The apartment itself could not be in a better location and was immaculately clean, beautifully furnished and very airy, The kitchen was modern and very well appointed. There is a supermarket and numerous bars & cafe's within the main square area. Sharon provided us with local wine and freshly made cake, which was delicious. Steve arranged to pick us up and drop us off at the airport as well. To summarise, I would recommend the apartment to anyone who was thinking of visiting the Carcassonne region and hopefully it will be available next time we decide to visit.

Delighted that the apartment didn't disappoint and you would book with us again! Hopefully we will see you again in the not too distant future :)

“Beautiful, luxury apartment in prime position centre of Carcassonne”

Reviewed 13 Sep 2015

The friendly and thoughtful service provided by Sharon and Steve was absolutely excellent. Were picked up promptly and then shown round an immaculate apartment, which contained everything we required. Even cakes and goodies were on hand. We couldn't have asked for more. Beautifully furnished, and the many paintings on the walls had been done by Sharon herself! Amazing. The location was perfect. Place de Carnot was on our doorstep, with its lively markets and abundance of good restaurants. Sun terrace and views were an unexpected bonus. We will be returning!

Thank you for your glowing review. It really was our pleasure to see you both again and we were delighted by how much you liked the apartment.

“What a find! A real Gem.”

Reviewed 24 Jul 2015

We thoroughly enjoyed our stay in Carcassonne, based in this gorgeous apartment. We appreciated the cleanliness, the very tasteful decor and furnishings, which created a very restful environment. Also, the pickup by Steve from airport and the welcome, including edible gifts, contributed to our being able to settle quickly, relax and enjoy our time. We found ourselves wanting to spend time in the apartment, as well as getting out and about (worth the stair climb). It was tempting to eat at home as Sharon seemed to have thought of everything in the kitchen. . We also loved watching the sun go down with a glass of wine on the rooftop terrace, and the view we had of the Bastille Day fireworks on the Cite were breathtakingly unforgettable. We loved the Cite, and cycling along the canal, as well as choosing from the many lovely places to eat. We took a train to Barcelona after our week here, which was fabulous, but the nice apartment there could not match the truly exceptional efforts of Sharon and Steve. All in all this was a superb experience, and our grateful thanks for such a wonderful apartment that enabled it. Thank you both.

How very kind of you to take the time to write this amazing review. Steve & I were really delighted that you had a memorable stay here. We would love to see you again!
