The Languedoc-Roussillon region

Languedoc Roussillon is a remarkable region. With the Mediterranean sea on one side and the Pyrenees to the south, it boasts contrasting culture and history. Intriguing history, that has survived the ages in tradition. The regions castles, fortresses or stunning abbeys, will take you back in time. The weather in Languedoc has a Mediterranean climate, with hot dry summers and over 300 days of sunshine a year. Temperatures are frequently in the eighties (30c) plus. With an outstandingly diverse coastline, sheltered by mountains. A stunning coastal region offering beautiful beaches and watersports for everyone. A region bordering Spain, it also benefits from some of the best winter sports in the Pyrennes. For those wanting a less energetic holiday, there are many other pastimes to enjoy. There is horse-riding for all levels and canoeing too.Food in Languedoc Roussillon is particularly enviable, due to its central location around the basin of the Mediterranean. Gastronomically rich, owing to the generosity of the sun, land and sea.The Languedoc plain is home to some of Frances greatest fruit and veg growing, with Mediterranean favourites, such as, sun-ripened apricots, plump tomatoes, artichokes, zingy lemons and much more. Natural coastal ' etangs ' provide homes, for flamingoes and marine life. The water rich areas provide the perfect habitat for oysters and mussels. Woodlands, scented with rosemary, tyme and mint, provide a natural habitat for wild boar, which helps provide the Languedoc with its winter diet. A rich dark stew with a glass of scented Corbieres, what could be better? For cheese lovers, you will not be disappointed. Goat's and sheep's cheese, infused with wild mountain herbs. Roquefort, world famous blue cheese, still made and matured in caves of the Larzac Plateau.Languedoc, is the word largest wine region and also the most exciting. It consists of a multitude of appellations, including, Corbieres, Fitou, St. Chinian, Muscats du Languedoc, Limoux and Cotes du Roussillon, the list continues and though yields have been significantly reduced, quality is now the name of the game. Established vines of the indigenous grape varieties, such as, Grenache and Cinsault, are grown alongside less traditional Syrah, Merlot and Chardonnay. Whether it be, a chilled glass of Chardonnay, with a brimming bowl of Moules mariniere, or a hearty rustic cassoulet, with a deep red Faugeres, you will find that the Languedoc Roussillon offers you the perfect accompaniement, to whatever the mood, occasion or setting.

“Lovely Apartment, Exactly as Described”

Reviewed 20 Jun 2016

We have just spent a wonderful two weeks at this lovely apartment, perfectly located to explore the Bastide and the Cite' as welll as the surrounding area. Sharon & Steve have thought of everything you need to have a comfortable & enjoyable stay; great to have a self catering place with a well equipped kitchen. Views from all the windows are stunning and will be one of my lasting memories of the trip. Steve gave us some great tips for places to go and things to see. We particularly enjoyed walking and swimming at Lake Cavayere. Boat trips on the canal de Midi were lovely and relaxing.

We were so pleased that you had a great 2 weeks and that you enjoyed your trips out. Thank you for your visit and we would love to see you again.

“5 star all the way and back”

Reviewed 11 Oct 2015

From the moment Steve collected us at the airport this was a great holiday.Sharon was there to meet us at the beautiful apartment with the glorious views. The apartment was spotless and had everything you could wish for to ensure a perfect week.It is so central to the square, the train station, the canal and all the lovely restaurants.Sharon had left us milk, cake, water and a bottle of local wine.We spent our week cycling and walking along the canal du midi.Evenings spent people watching and reading in Carnet square with the obligatory bottle of wine.A visit to La Cite is a must do .Train to Limoux at cost of one euro is a must.If you are thinking of visiting Carcassonne a stay at this apartment will not disappoint.

Thank you so much for leaving us this great review. It would certainly be our pleasure to see you again!

“Great apartment with superb views over a great city”

Reviewed 20 Sep 2015

We absolutely loved our stay in this apartment. The apartment was spotless and had all modern comforts such as WIFI etc. It has a large bedroom and lounge and smaller but fully equipped kitchen. As advertised the views over the Bastide and of the Cite were breathtaking. The apartment is in a great location - minutes away from the train station, Place Carnot (centre of the Bastide) and Canal du Midi; 10 -15 min walk from the Cite. Sharon and Steve were organised, approachable and very welcoming (a bottle of wine, milk, water and home-baked cake awaited us); We were met at the apartment at the appointed time and when we left, Steve even dropped us off at the airport. Of the three apartments we stayed at during our trip this was definitely the best one; if we come back to Carcasonne we know where we will be staying!

Thank you so much for taking the time to write such a great review for us. We were thrilled that you really enjoyed the apartment and the views and were delighted to hear that you would return. Thank you :)

“Lovely place, great host and stunning views”

Reviewed 21 May 2013

Sharon is a great host. A bottle of wine in the fridge, transport to the airport and some great tips on where to get the best bread (it was amazing). The apartment is spacious and clean and she has thought of everything. The views of the Cite and the snow capped Pyrenees were super restful as were the books and DVDs available in the apartment. The lift is a proper wheezy french one was a bit unnerving at first but I got used to it. Thanks Sharon. Hope all goes well for you.

Thank you for the review and for your stay. Yes, the view of the snow capped Pyrennes are stunning aren't they. No better view to wake up to. I do hope to see you again!

“our Son loved the apartment too”

Returned as planned for the fireworks had a fabulous time great attention from Sharon and Steve met at the Airport and returned there at the end of our stay .Fireworks were magnificent same with the view we love it all wish we could return more often thanks again for a lovely stay. Dont think our son will let us come on our own again as he really enjoyed his stay too

Thank you for your return visit. I'm so glad you all enjoyed the fireworks. You do get a fabulous uninterrupted view from the apartment. What's even better is, you can open a bottle of local 'champagne' get the nibbles in and you are set for the evening. We do hope to see you all again!

“The most perfect location and view in the whole of Carcassonne”

Reviewed 2 Oct 2012

We honestly couldn't quite believe how beautiful the apartment was, every room had everything you need, lovely decor and the best bit was breakfast every morning overlooking the rooftops of the city. Sharon and her partner were so nice, you really felt how much effort they have made on this beautiful place. They even left us a bottle of regional rose wine in the fridge ( and I don't normally like rose but this one was nice)! Would most definately recommend. Laure and Jack

Aw…Thank you for your visit and the great review. Even though I spend a lot of time in the apartment cleaning etc, I am still amazed by the beautiful views of the rooftops, the 'fairytale' castle and the snow capped Pyrennes beyond. If only I could paint. A great haven for an artist! We would love to see you again!

“Amazing Apartment with Fantastic Views, very central & great facilities”

Reviewed 3 Jun 2012

We came to Carcassonne for a much needed break and found the perfect place in the Mistral Apartment which was a home from home for our 8 day stay. The apartment is perfectly situated in the centre of Carcassone, minutes away from all amenities with the Medieval City a very pleasant 15 minute walk. The apartment has the most amazing views across the roof tops of Carcassone, from any window you can see the Medieval City and in the distance the Pyrenees mountains. The market on Saturday mornings is a must for anyone who intends to eat in at any time with a huge selection of fresh produce available and the apartment is fully equipped with everything necessary to make cooking in as easy as home. We would also recommend a trip to the Medieval City which has numerous restaurants & gift shops (something for everybody). A trip along the Canal du Midi is well worth the time and for €1 there is a trip via train to the picuresque mountain village of Quillan. The jewel in the crown for us was our visits to Lake Caveyere. The lake is approx 15 minutes by bus from the town centre & costs €1 per person each way. The beach & swimming facilities are second to none. Last but not least, we would like to thank Sharon (the apartment owner) for collecting us from the Airport on arrival & dropping us back for our departure. This not only made our holiday easier but made us feel most welcome and Sharon provided a lot of information regarding local places of interest. We would hope to return to Carcassone in the future & would definitely contact Sharon again. Sandra & John. Co Westmeath, Ireland.

I am so glad you really enjoyed the apartment and its views. They do make the perfect 'backdrop' at mealtimes. Yes, we are very lucky to have our own beach. It is a great place to relax, swim and soak up some of our beautiful mediterranean sunshine. We often take a picnic at teatime and swim until the sun goes down, which is a lovely way to wind down at the end of a day. Look forward to seeing you both again. Thank you!

“an ideal city appartment”

The Mistral apartment has everything you need for a stay in a city like Carcassone. Comfortable, quiet, all the basic facilities, walking distance from the rail station, shops and marche's nearby. And a wonderful view of La Cite (old city), esp in the evening when it is illuminated. And good vfm. And a most hospitable owner, who met us at the station, and a pleasant little surprise for us on the table when we arrived. We have come back a second time after an equally enjoyable stay in 2011. Thank you Sharon

Thank you for coming back to Mistral Apartment. It was lovely to see you again. Hope to see you again in the not too distant future.

“even better than expected”

Reviewed 10 May 2012

The apartment was all that we expected and more. The views over the rooftops to the Cite and the Pyrenees were truly stunning from the livingroom, kitchen and bedroom. The apartment is spacious and very comfortable so that we could enjoy a wet day indoors. There is a good selection of books, CDs, DVDs, tourist information, and even an umbrella! The kitchen is thoughtfully supplied with useful items such as olive oil, has both cafetiere and drip machine for coffee, and a French cookery book for inspiration after a visit to the market on Place Carnot nearby. The situation is excellent, with a patisserie for morning croissants, pain au chocolat, bread etc literally round the corner, three supermarkets, railway station, Canal du Midi, bus up to the Cite all within very easy walking distance. It was particularly welcome to be met by Sharon at the airport and brought to the apartment.

Thank you so much for taking the time to review our apartment. I am so glad you had a wonderful stay and it lived up to more than your expectations. I enjoyed meeting you both and hope to see you again sometime.

“A delightful apartment with everything to make one's holiday enjoyable.”

Reviewed 7 Apr 2012

We enjoyed a lovely week at Carcassone, made very special through the additional efforts of the host to provide everything needed to ensure a memorable stay. Being met personally on arrival, and assisted with parking and getting to the apartment was a special touch. We were able to relax and recuperate whilst sight-seeing around the area, thanks to the thought and attention to detail that is evident throughout the apartment. Views are spectacular, especially at night, and the central location is wonderful for just walking and exploring this interesting city.

Thank you so much for your kind words and stay. I do appreciate and take on board all feedback, to try and maintain or improve any thing I can, to make my guests stay as enjoyable and comfortable as possible. Hope to see you again.
