The new Cork service will run three times a week from the end of May until the first week of September, starting from 2008.
The new flights from Dublin begin in April next year.
Peter Sherrard, Ryanair's head of communications, said that with new services from East Midlands and Glasgow Prestwick having started on Thursday this week it was easier than ever before for people to travel between Britain and Cork.
Carcassonne is around 95 km south east of Toulouse and lies between the Pyrenees and the Massif Central mountains.
Among the attractions to be found in Carcassonne is a medieval walled town that is listed as a UNESCO world heritage site. The fortifications feature 52 towers and two rings of town walls, making a total of 3 km of battlements.
