The Golfo Aranci area
Golfo Aranci in Sardinian i also known in as ‘Gallurese Figarè is a municipalità of 2.206 inhabitants, being part of the province of Olbia-Tempio, in the historic region of Gallura.
Strangely, the name of the municipality comes from the Gallurese "Golfu di li Ranci" (Gulf of the Crabs), and nothing to do with trees or the orange fruit!
Undoubtedly very few people know that the ‘Golfo Aranci is home to a population of ‘bottlenose’ dolphins, a species of dolphins which commonly live along the Italian coastline and are visible to all in the waters in front of the island of ‘Figarolo’ which is opposite Golfo Aranci.
Inia is one of the most sought after tourist destinations, loved by International as well as Italian visitors, not only for it’s beauty, but also for it’s original and rich gastronomy, based on antique recipes passed down through the generations.
Each province respects it’s own traditions using typical products from that area. Thanks to the geographic position of the island, including the sea, lagoons, teaming with fish, and the hilly internal part, the typical cooking ingredients differ but at the same time are simple and natural.
STARTERS
The typical Sardinian dish which precedes lunch or dinner consists of local cold cuts prepared by the local farmers, these include raw ham, Sardinian goat’s cheese, olives, all garnished with fresh vegetables. It is also possible to find a starter which includes crabs, muscles, lobate, octopus, sea urchin, limpit and caviar.
Il caratteristico piatto sardo che precede il pranzo o la cena è costituito da salumi misti prodotti
- BREAD AND PASTA
The Sardinian tradition boasts many different types of pasta, dried and fresh and alot of bread types.
The basic ingredient is always bran wheat, used to prepare the famous ‘malloreddus, well know flat bread, known as ‘music paper’, ‘fregola’, made with hand made pasta in the form of small balls and oven toasted and ‘culurgionis’, filled with ricotta cheese.
MAIN DISHES
All the meat dishes are characteristically spit roast suckling pig , seasoned with branches of myrtle, boiled kid and lamb, ( I prefer them roast), very tasty). Of course lets not forget a delicious mixed seafood grill.
COLD CUTS
In Sardinia, the cold cuts are prepared according to ancient procedures and with the use of very simple ingredients, salt, few spices, and an accurate maturing. The most characteristic of the Sardenian cold cuts is the raw ham from pigs and wild boar found in the local mountains, also the local sausage, dried
CHEESE
Sardinia has always been considered very important for it’s pastures, the breeding of Sheep and goats represents the most important economic. The most esteemed cheese, is therefore Sardinian goat’s cheese, D.O.C. produced exclusively in Sardinia.
DESERTS
The traditional Sardinian pastries vary alot for every occassion and recurrence.
The typical basic ingredients for most Sardinian sweet dishes is almonds, which which ‘amaretti’ are prepared and ‘is pabassinas’ with the addition of dried fruit.
WINES
Sardinia boasts an antique wine growing traditio, from which originate very high quality wines.
The island wines are full bodied and with a high alcohol content. Amoung the most valued and well known are surely Cannonau, Malvasia, Vermentino, Nurgus and La monica
LIQUOR (DIGESTIVE DRINKS)
The antique tradition i salso alid for the ‘after dinner drinks’, having learned to transform the rich variety of characteristic plants from the Island’s setting, into excellent, perfumed and delicate substances. The most well known is surely Mirto, red or white, but we must also mention the liquor made with prickly pears and the well known brandy, known s ‘filu’ and ‘ferru’.
