The Languedoc-Roussillon region

This region is an extremely popular area to stay in France. Enjoying lovely long warm Summers and pleasant temperatures in Spring and Autumn. Lots of local history in and stunning scenery. Cathars castles dot the region and the rural French countryside provides many "WOW" moments (don't go anywhere without your camera!) on any drive in the area. Mirepoix, Limoux, and Carcassonne are minutes away and have events year-round.

Mediterranean beaches, lakes, rivers, mountains, vineyards, wineries. Landscapes are nevertheless very diverse, from the Mediterranean Sea to the Pyrenees mountains. Amongst a rich heritage, discover the medieval castles, the « Citadelles du vertige » (literally, head spin citadels), evidence of the Cathar epic ; romanesque abbeys and cloisters; the Medieval city of Carcassonne; the Roman city of Narbonne; prehistoric caves; and many other unique locations. There are a wide range of outdoor activities in spectacular landscapes : walks under the centenarian trees bordering the famous Canal du Midi, hiking, water sports, cycle touring, mountain bike tours, speleology, and many more. Above all, Aude hosts the biggest and oldest vineyard of France. Gastronomy is an art in this region, where you'll be delighted by local recipes and grand wines.

Carcassonne

Limoux is perhaps best known for its Winter festival, Carnival or fête. It is generally referred to as Carnaval de Limoux in the French language. This takes place between January and Easter. As of 2011 the wine Festival "Toques et Clochers" will be held in Limoux every spring. The cafe scene is dominant in Limoux where food and drink represent the dominant cultural pastime.

The heart of the town is the place de la République, a wide square with some fine stone arcading and a number of timber framed houses. Limoux straddles the River Aude and the banks are lined with grand houses, especially on the eastern side, the so-called Petite Ville (lit. "Small City").

Limoux is an attractive place with a wonderful sense of fun. The town likes to party in a most unself-conscious way and for its own pleasure rather than for the sake of tourists. While worth visiting in itself, it is also an excellent base for discovering the history of the region and is ideally placed for exploring the coast, the mountains and some of the finest walking country in France.

Mirepoix: On the large central square you can still admire the half-timbered houses supported on wood pillars, creating a magnificent covered arcade. The ends of the joists of the richest houses are sculpted, and the most beautiful sculptures are on the house of the Justice du Seigneur, which became in 1500 the Maison des Consuls, showing women's faces, bearded heads, a tortoise and other fantastical images.

The little church of St Maurice built in 1298 by Jean de Lévis and his wife Constance de Foix was transformed over time into a cathedral. Today the cathedral of St Maurice has a single nave 48 m long, 24 m high, 22 m wide, a gothic gate and an elegant 60 m high pointed belltower. Of the cathedrals of Europe only that of Gerona in Spain has a wider nave. You can still admire a tabernacle, a Christ on the cross from the 14th century and seven paintings by Larivière-Vesontius.

Peyrefitte-du-Razès is a small village on the road midway between Limoux and Mirepoix with signage directing you to Domaine de Couchet.

""Domaine de Couchet is fantastic!""

We had a great family holiday at Domaine de Couchet. The owners Justine and Randall gave us a warm welcome and were delightful hosts, available with any advice when requested. Pictures don't do justice for this property, a very comfortable French manse; Large rooms and baths with an awesome fireplace along with all the modern conveniences of home in a wonderful setting. A large outdoor terrace with huge table provided for outdoor enjoyment for every meal on the south-facing terrace with a great view. The new modern kitchen has everything! We spent the daytime either exploring the Cathar country and castles or lounging around the pool. A trip to the beach or to visit the mountains for skiing were only one hour away. At night the quiet countryside and the clear night sky was amazing! We will definitely be back for another two weeks as there are so many things to do - or not and just relax :) while staying at Domaine de Couchet. It was great to share this special place with family and friends to make memories we will share - and relive when we return.

Thank you so much for your review. We are so glad you had an enjoyable holiday here and hope your trip back to Scotland was a good one. Best wishes to you and hope to see you soon. Justine

"Great time had by all on our return visit"

We visited Domaine de Couchet 15 years ago as a younger couple when it was a bed and breakfast. Later we visited before the birth of our first child and met the charming owner Justine. Recently, we returned with our children (ages 7, 5, and 2yo twins) and grandparents. It was a delight to see Justine again (and meet her husband Randall) and to see the improvements to the property since we last stayed. The new kitchen is kitted out with all modern conveniences. The outdoor terrace is great for having a nice long relaxing meal any time of the day. There were plenty of toys and games for the children to play with in the large library above the living room (Tom, Justine's boy, was great with playing with our children and answering any questions they had about the place). We enjoyed a warm fire in the fireplace on cooler nights. The pool wasn't open but we told the kids as we looked at it from their bedroom window that we would come back when it is warmer sometime to enjoy it. On a cooler note the children loved the visit to the ski station at Mont d'Olmes for a day of snow and lunch in brilliant sunshine. A day spent at Lac de Montbel was also enjoyable as there are paths to walk around the lake and into the woods with stunning views of the Pyrenees. We love the place and now our children do as well. Great for all ages. See you again soon.

Thank you for your review. We are glad you all enjoyed your visit here and hope to see you soon in warmer weather to make full use of the pool. Best wishes to you all from Justine, Randall and Tom

"A totally wonderful experience."

Arriving at Domaine de Couchet was so exciting and the owners Justine and Randall gave us a really warm welcome. Pictures don't do justice to this property as this home is trully loved and well cared for and is in a wonderful French setting. We enjoyed large and comfortable rooms, an awesome fireplace, and all with the modern conveniences of home in a fabulous setting. The large outdoor, south-facing terrace, with a huge table, provided great outdoor enjoyment for every meal. We just couldn't get away from the great view. Loved the new modern kitchen - had everything we needed. We spent the daytime exploring the Cathar country and castles - such an interesting history. We slept soundly every night due to the quiet countryside and the clear night sky was amazing! We will definitely be back as soon as possible as there are so many things still to do and see. Domaine de Couchet has left us with very fond memories and we can't wait to return. Thank you for your hospitality Justine and Randall, can't wait to see you again.

It was really lovely to welcome you here. We are glad you had such an enjoyable European holiday and that you loved the house and many of the fun things to do around here. We hope you had a safe trip back to Australia. Fingers crossed we'll be able to see you again in France.

"Beautiful house, beautiful view, welcoming hosts"

The location was the perfect getaway for our small group of friends. The fully equipped kitchen and local markets made for some great meals. The spacious dining room indoors was warm and welcoming with a fire going in the next room for the few chilly nights we had. Dining on the patio comes complete with a beautiful landscape of green, hilly terrain of the surrounding area. The pool was perfect for some of the scorching days we had.

Justine and Randy were wonderful hosts and were always available for any questions we had about the house or things to do in the area. They gave us practical advice regarding local markets and wineries.

We had a wonderful stay and would definitely recommend it to others.

We hope you will come back soon. The natural surroundings at Domaine de Couchet are never disappointing and even on a cooler night the inside is warm and inviting.

"Fantastic"

A wonderful holiday in a beautiful location. The house was perfect - all the ammenities we could ever need. The market in Mirepoix was amazing, we found and cooked a feast every night with delicious local food and wine. We felt lucky to have been able to use both the pool and fireplace (occasional chilly nights), which both felt really special. (Thank you to Justine for help lighting the fire). We were able to visit the nearby Lac du Montbel, various villages and Toulouse. It was great to be able to get advice from the friendly locals (Justine and Randy) on the best places to visit and how to get there. We would definitely recommend this to anyone!

Spring 2013 did have some chilly nights but there is a warm spot here at Domaine de Couchet for everyone any time of the year. Hope to see you again!

"Beautiful setting, relaxing amidst history"

As an American who doesn't speak French, I was a little nervous when I brought my family to stay at Domaine du Couchet. My fears were quickly allayed when we met our charming hostess Justine Wallington. Not only was she welcoming and gracious, she was quite knowlegeable about the history and features of the area. This enabled us to expose our children to history and culture of France that they would never have gotten from a textbook. How often do your children get to walk in an old castle and imagine the life there? In addition, she pointed us to wonderful places both to eat and buy food. The market of Mirapoix was out of a fairy tale. The dinners at Les Remparts and Hotel Commerce in Mirepoix were better than 5 star restaurants back home. Even the supermarket fare beat our fine gourmet shops here in the states at 1/10th the price. It was so relaxing at the Domaine, surrounded only by nature, yet having the amenities such as the gorgeous pool all to ourselves. I never dreamed we were going to such a retreat. We cannot wait until we have a chance to visit again--in some ways I don't even wish to write this review as I would like to keep the place all to myself. Seriously though, this is a spot not to be missed.
